The Reverie Saigon hosts Michelin-starred chefs

HCMC - Michelin-starred husband and wife Rupert and Carrie Blease from San Francisco-based restaurant Lord Stanley are introducing their award-winning, European-inspired cuisine at The Reverie Saigon from now to July 7.

The two will present a five-course set dinner and a special 45-minute three-course business lunch exclusively at Café Cardinal that is sure to be the culinary event of the year.

Signature dishes include delights such as “confit” salmon with alliums, dill and “beurre blanc”, hen “consommé” with summer beans and Iberico ham, steamed sea bass over kombu, charred lettuces with coriander, curried braissage with lime leaf oil, and Wagyu beef top sirloin with red wine jus, pickled turnips and pistachio.

In New York, Rupert Blease worked at three-star Thomas Keller’s Per Se which is frequently acknowledged as the best restaurant in the U.S. and amongst the best in the world while Carrie progressed her culinary experience at Blue Hill, also a Michelin-starred restaurant.

In 2011, they moved to San Francisco, where both were cooking in different restaurants - she cooked at Commonwealth and he at Central Kitchen. They opened Lord Stanley in 2015 and received a Michelin star the following year.

Talking to the Daily after arriving at The Reverie Saigon on July 3, Rupert said: “We are very excited to be stopping in HCMC during our Asia tour. It is a wonderful opportunity to have a whole new audience experience.”

Carrie added that she was eager to delve into the local cuisine. “Vietnamese food is rightly revered around the world, so I really can’t wait to try it first-hand and see what elements I can adapt and use at our restaurant.”

Kai Speth, WMC Group Vice President for Operations and Business Performance, said the appearance of Rupert and Carrie Blease at The Reverie Saigon cements the hotel’s reputation as a leader in the culinary arts not only in Vietnam but also in Southeast Asia.
