HCMC – Hum Dining has launched its first fine dining menu, Hum Signature, crafted entirely with plant-based ingredients and prepared with meticulous care to preserve the authentic flavors of its ingredients.
At the launch event in early 2025, titled “Season in the Moonlit Garden,” Hum Signature treated guests to an elegant nine-course plant-based menu. The dishes are crafted from seasonal vegetables, fruits, mushrooms, and distinctive spices sourced from various regions across Vietnam. Each dish, named after its primary ingredients and origins, highlights the country’s rich plant-based heritage, from the rocky highlands of Dong Van and Sapa to the fresh green rice of Hanoi and produce from sunny Ninh Thuan and Tra Vinh.
The Hum Signature menu is served at 32 Vo Van Tan Street, District 3, HCMC, where the Hum brand was established in 2012. Located in a French colonial villa over 100 years old, the venue blends historic charm with rustic local materials and natural elements, creating a tranquil ambiance in the heart of Saigon.
Menu highlights include:
• The dap (hitting) cake with Sapa forest shiitake mushroom – Pickled baby carrot in apricot vinegar – Braised lotus root from An Giang in coconut blossom syrup from Tra Vinh
• Tomato medley
• Daklak avocado, Ninh Thuan green apple wrapped with herbs
• Fresh kohlrabi wrapped with dried radish from Dong Van
• Green sticky rice liqueur from Hanoi
• Long An watermelon, Huong Tich apricot, mint honey sauce
• Charcoal tofu, roasted eggplant sauce, peanut sprouts, finger lime
• Purple sweet potato noodles, button mushrooms from Lam Dong
• Banana peanut ice cream & Tien Giang grilled sticky banana
