Ambassador Cruise unveils ‘Dining Under the Stars’ Experience

Ambassador Cruise has introduced a new dining experience, “Dining Under the Stars,” on its overnight journeys through Halong and Lan Ha bays, offering guests a luxurious meal under the UNESCO World Heritage-listed night skies.

The boutique cruise operator’s latest concept features two specially curated menus by executive chef Nguyen Gia Thien, presented on the 360-degree sundecks of Ambassador Cruise vessels. Guests can choose between international or traditional Vietnamese cuisine, accompanied by live entertainment.

The “Heritage By Night” five-course menu offers selections such as roasted sea bass with chorizo butter, pan-seared beef medallion with crispy potato, and caramelized duck breast flambé. Alternatively, the “Four Seasons” Vietnamese menu includes dishes like deep-fried Halong squid cake with young sticky rice, marinated beef and pomelo salad, and stir-fried scallop with organic mushrooms.

Live performances by an international band, singing in English, Vietnamese, Korean, Indian, and Filipino, further enhance the atmosphere, playing every evening except Monday.

The experience is available on all overnight cruises and will extend to dinner cruises during the summer months for an additional fee. Ambassador Cruise, launched in 2021, operates four luxury vessels across Halong Bay.
