Initially nurtured the passion for cooking in his hometown – Milan, Cappellato’s vision extended far beyond Italy’s borders across to Asia, a region vibrant with culinary innovation and an insatiable appetite for new dining experiences.
Cappellato continues his Hyatt journey from Park Hyatt Jakarta to Park Hyatt Saigon. His cooking philosophy remains unchanged: to allow the essence of his homeland to shine through in every dish he creates by keeping the simplicity of fresh and quality ingredients.
