HCMC – Luxury resort Six Senses Con Dao has named Costa Rican chef Memo Hernandez as its new executive chef, the company announced.
Hernandez, whose career spans six continents, brings a commitment to sustainability, innovation, and authenticity to the Vietnamese island retreat. His global experience includes roles in the Maldives, China, Dubai, Spain, Fiji, and Tanzania, where he has integrated local ingredients with international techniques to craft unique dining experiences.
Trained at the Instituto Nacional de Aprendizaje (INA) in Costa Rica, Hernandez has developed a culinary approach that aligns with Six Senses’ values of sustainability and cultural authenticity. His leadership at the resort’s dining venues is expected to emphasize fresh, locally sourced ingredients while reflecting Vietnam’s rich culinary heritage.
