Michelin-selected restaurant Madame Lam has partnered with EU Pork to launch a special menu showcasing premium pork from Spain and Portugal, highlighting a fusion of contemporary Vietnamese and European culinary artistry.
The collaboration, now in its second year, aims to celebrate the quality of European pork and its harmony with Vietnamese fine dining. Europe is the world’s second-largest pork producer and leading exporter, known for high standards in sustainability, food safety, animal welfare, traceability, and flavor.
Created by Chef Nhu Cuong, Madame Lam’s special four-course menu will be available from November 1 to 14, 2025. Dishes include a European pork tenderloin salad with passion fruit dressing, truffle pork dumplings, kombucha-marinated pork ribs with herb sauce, and crispy sticky rice wrapped pork tenderloin and ham, all paired with selected European wines.
Madame Lam, recognized in the Michelin Selected list for three consecutive years, is known for reimagining traditional Vietnamese flavors through a refined, modern lens.
