Muscovy duck meat patties, skillfully prepared by the people of Hanoi, have become a beloved dish in the city’s rich culinary tradition.

Muscovy duck meat differs from regular duck meat, boasting a firmer texture, richer flavor, and a more pronounced aroma.

While the patties may be an acquired taste, those who try them often find the unique yet comforting flavors irresistible. Many diners choose them as a main dish or enjoy them during casual drinking sessions.

As the name suggests, the key ingredient in this dish is Muscovy duck meat. The meat is carefully prepared to eliminate any unpleasant odor before being deboned and sliced into thin, bite-sized pieces. It is then marinated with galangal, lemongrass, fermented rice, and fermented shrimp paste—staple ingredients in authentic northern Vietnamese cuisine.

Once the charcoal reaches the perfect heat, the seasoned meat is spread evenly on the grill, frequently flipped to ensure a crispy exterior while remaining juicy and tender inside.
