Sa sung porridge is a cherished dish that has won over food lovers across Vietnam. Prepared in the Teochew style, each bowl is cooked fresh to order, ensuring a flavorful and satisfying experience.

Sa sung, also known as the peanut worm (scientifically Sipunculus nudus), is a prized seafood delicacy found in coastal areas like Van Don in Quang Ninh Province, Nha Trang, Con Dao, Ben Tre, and Bac Lieu. Rich in nutrients, sa sung is commonly used in dishes that promote health and well-being.

For sa sung porridge, only firm, evenly sized sa sung with a fragrant aroma—free from a fishy smell—are selected. Cleaning the sa sung thoroughly is crucial, as their intestines contain sand, which can affect the flavor of the dish.

Unlike other porridge varieties that are simmered for long periods, sa sung porridge is prepared fresh to order, Teochew style. This method ensures that the sa sung is perfectly cooked, maintaining a tender yet crisp texture. The resulting bowl is infused with the natural sweetness of the seafood.

Each serving is accompanied by crown daisy (Garland chrysanthemum), thinly sliced ginger, and a dash of pepper, which not only balance the richness of the porridge but also enhance its aromatic appeal.
