Phu Yen is renowned not only for its pristine white sand beaches but also for its unique local delicacies, one of which is cha dong. While the name may be unfamiliar to some, this dish delivers an unforgettable taste and is a must-try for visitors.

Cha dong is a simple dish in appearance, ingredients, and preparation, reflecting the rustic charm of the central region. The key ingredient is the meat of the dong, a small reptile that inhabits the sandy coastal areas of Phu Yen. According to experienced hunters, late spring to early summer is the prime time for dong, as they are plumper and their meat becomes even more flavorful.

The preparation begins by cleaning the dong and removing its skin, entrails, tail, and legs. It is crucial to avoid rinsing the meat with water after skinning, as this can result in a fishy taste. The meat is then finely minced and mixed with spices like lemongrass, wood ear mushrooms, pepper, and chili. The seasoned mixture is tightly wrapped in thin rice paper and deep-fried until golden and crispy.

Cha dong is best enjoyed with fresh vegetables and a specially prepared dipping sauce. The sauce often features ground peanuts, vinegar for a sweet and sour kick, and a spicy touch of chili. This perfect balance of crispy cha dong, fresh greens, and rich dipping sauce creates an irresistible flavor.
