Deep within the mangrove forests of the southernmost province of Ca Mau, lives a creature as strange as it is delicious: the mudskipper (locally known as Cá thòi lòi).

Often called the “tree-climbing fish,” this unique species is known for its ability to swim, walk on mud, and even leap between tree branches. Despite its somewhat “ugly” appearance, the mudskipper has become a celebrated specialty of the Mekong Delta because of its firm, sweet, and non-fishy meat.
