Tales by Chapter, a newly opened restaurant in downtown HCMC, has introduced Vietnam’s first zero-waste, plant-based fine dining concept, aiming to redefine sustainable gastronomy.

Tales by Chapter utilizes every part of the ingredient—transforming stems, branches, flowers, and fruits into flavorful dishes, fermenting leftovers into unique spices and drinks, and crafting sauces and teas.

The restaurant’s first plant-based menu, ZERO, ensures that each ingredient undergoes a complete lifecycle, originating from a farm in Dalat and going through a full-cycle process. The 14-dish set menu is priced from VND1,650,000++ per person (excluding beverages).

With a mission to deliver exquisite culinary experiences while promoting environmental sustainability, Tales by Chapter transforms food consumption into an art form, setting a new standard for conscious dining in Vietnam.
