A familiar yet delicious dish in Phu Yen

Aside from garlic chive rice noodle soup or stewed tuna eyes, fried rice with green bird’s eye chili salt is indispensable in a collection of Phu Yen’s specialties.

That was my first try of the dish on a recent short trip to Phu Yen Province. To tell the truth, during my life, fried rice is not my favorite plate. However, it was different that time, and the rustic dish from Phu Yen really impresses me.

The light green color of rice looked attractive. The fried rice’s crispiness left a good taste in my mouth. Moreover, the spicy flavor of green bird’s eye chilies would make the dish unforgettable to your sense of taste.

Understandably, good rice is the first to achieve the best dish of fried rice. According to local eatery owners, fragrant rice is cooked until it becomes fluffy. The rice had to be cooked the night before to let them cool down overnight. This step helps maintain the rice’s dryness and aroma.

Phu Yen fried rice stands out from other versions across Vietnam because of its green color which comes from green bird’s eye chilies. The chilies are pounded with salt to obtain the mixture that is the dish’s unique spice.

Diners can try Phu Yen fried rice with green bird’s eye chili salt at many local eateries in the central coast province.
